5 Thanksgiving Leftover Recipes
Happy Thanksgiving from Pierogi and Springroll! We know Thanksgiving is looking a lot different for many families (including our own) this year. We hope that you are safe and healthy and are thankful now more than ever. Even with the many changes this year, we love cooking and enjoying all the traditional Thanksgiving mains and sides. Like any Thanksgiving dinner, we're sure there will be plenty of leftovers. We're sharing five of our favorite creative ways to use up the leftovers from your Thanksgiving feast below. These recipes will definitely help use your leftovers and mix up the flavors so you don't get bored with the same plate of food. If you have been following the blog this month, you know I absolutely love all things cranberry. My previous posts featured cooking cranberries fresh, but this recipe is great because it utilizes leftover prepared sauce. The creamy and funky brie is perfectly complemented with rosemary and cranberries. This tart would be a great appetizer or meal on its own, depending on how hungry you are. I love potato pancakes and these mashed potato pancakes are packed with flavor. They provide the perfect combination of savory mashed potatoes, with crispy edges and soft centers. These loaded potato pancakes from How Sweet Eats include bacon, sharp cheese, green onions, and sour cream (leave out the bacon to keep these vegetarian). Bonus: you can enjoy potato pancakes for breakfast, lunch or dinner!
4. Stuffing: Stuffing-Crust Quiche | Food.com
You may still be full the morning after Thanksgiving; but in the case that you're not, you can try out this brunch twist on stuffing. This recipe from Food.com uses leftover stuffing to create a flavorful and crispy crust. It is a fun way to use just a small amount of leftover stuffing (only 1.5 cups are required for the crust).
5. Sweet Potatoes: Sweet Potato Pie Bars | From my Bowl
To round out the list of Thanksgiving leftover recipes, I have one dessert to recommend: From my Bowl's Sweet Potato Pie Bars. These bars are easy to make, vegan, and refined-sugar free. In other words, they will satisfy a sweet craving without the weight of other desserts. The recipe includes instructions for cooking the sweet potatoes and adding sweetener.
