5 Must-Try Pumpkin Recipes
Happy October from Pierogi and Springroll! To kick off our second month as a blog, we're going to be sharing five must-try pumpkin recipes from some of our favorite food blogs. All of these recipes can be made with canned pumpkin puree - be sure to look for pure pumpkin (not pumpkin pie filling) on the label. Stay tuned for cozy recipes and autumn adventures all month long.
1. Pumpkin Spice Latte | Inspired Taste
There's a reason why Starbucks' Pumpkin Spice Latte has become a fall favorite every year - appearing on menus as early as August this year. The warming spices, mixed with rich coffee flavor are perfect when the sunrises are a little later and mornings are a little cooler. This recipe from Inspired Taste actually includes pumpkin puree to enhance the richness of the drink and adds the pumpkin to the pumpkin spice latte. Did you know most pumpkin spice coffee blends don't actually include pumpkin? Be sure to check out their youtube channel for more great recipe videos.
2. One-Pot Pumpkin Pasta | From My Bowl
I love simple, one-pot pasta recipes that taste delicious and use seasonal ingredients. I also love using pumpkin in savory dishes. It has a natural sweetness, richness, and depth of flavor that pairs perfectly with garlic and sage. This one-pot pumpkin pasta by From My Bowl takes less than 30 minutes to make and is totally vegan (all her recipes are vegan and many are gluten free). If you like this recipe, be sure to check out her youtube channel as well for more great pumpkin and vegan recipes.
3. Pumpkin Cinnamon Rolls | Sweet Simple Vegan
Dine-in is still limited in Washington, but that doesn't mean we can't make a delicious brunch buffet at home. These pumpkin cinnamon rolls are the perfect fall brunch treat whether it's a quiet cool morning at home or Thanksgiving morning. The rolls rely on yeast, so be sure to set aside a little time for this recipe - maybe enjoy a pumpkin spice latte or pumpkin chai tea while you're waiting for the dough to proof. Sweet Simple Vegan has all the recipe details on their blog - be sure to check out their youtube channel too.
4. Simple Pumpkin Soup | Minimalist Baker
Nothing beats a warm bowl of creamy pumpkin soup on a cold, rainy, fall day. Here in Seattle, the rainy season can start as early as October, so having a variety of soup recipes to warm up is key. This simple pumpkin soup is a little bit sweet, a little bit savory, and totally creamy from the coconut milk. This recipe from the Minimalist Baker includes instructions to make your own pumpkin puree from scratch - make a big batch to use in all these recipes!
5. 6-Ingredient Pumpkin Butter | Half Baked Harvest
Pumpkin butter is so delicious - one of my favorite spreads for toast, bagels, and crackers. It can be added to oatmeal, ice cream, and smoothies/milkshakes. It is thick, creamy, sweet and spicy. Also, it's totally vegan, gluten free, and refined-sugar free, so you can feel good adding it to everything. This recipe from Half-Baked Harvest is so simple and just 6 ingredients.
